What Momma's Making

Whew, what a productive day in the kitchen yesterday.
Perhaps I didn't make it out of my bumming clothes  but I certainly was productive in the kitchen.
Cleaning & cooking!




So, what have I been making...

I made this lovely for supper, chicken pot pie...so yummy!

1c onion, chopped
1 c celery, chopped
1 c carrots, chopped
 1/3 c margarine
1/2 c. plain flour
2 c chicken broth
1 c evaporated milk
1 tsp salt
1/4 tsp pepper
4 c cooked chicken, chopped

Saute onion, celery, and carrots in butter for 10 minutes. Add flour to sauteed mixture, stirring well. Cook 1 minute, stirring constantly. Combine broth & milk; heat, stirring constantly until thickened & bubbly. Stir in salt& pepper. Add chopped chicken, stirring well. Pour chicken mixture into a shallow 2-quart casserole. Top with pastry and cut slits for steam. Bake at 400* for 40 minutes.

Basic Pastry:

**You can also use the boxed flat pie shells.

1 c. plain flour
1/2 tsp salt
1/3 c. plus 1 Tbsp shortening
2-3 Tbsp cold water

Combine flour & salt in bowl; cut in shortening. Sprinkle with cold water & stir with fork until all dry ingredients are moistened. Shape into ball. Roll out to fit casserole dish.

Black Bean Dip 
(for baby shower at work)


 This recipe is so easy & oh so yummy.

1 can shoepeg corn, drained
1 can black beans, rinsed & drained
green onions, diced 1/2-1 bunch
1 container of feta cheese, crumbled

1/2 c apple cider vinegar
1/2 c canola oil
1/2 c sugar

Mix well before pouring over

**I serve with the scoop tortilla chips

Those Red Velvet cookie sandwiches look/sound so yummy! I have never heard of those. Mmmmm I'm gonna have to give it a try at making those! :P
